Birthday Dinner

Tonights Dinner!


Yesterday was my Dad's Birthday so of course I wanted to make him dinner. I decided on something tasty but healthy, because we all know there is nothing healthy about Birthday cake I found this online and went with it. Really, really Good!

The Food

Couscous adds fiber and protein to you diet.

  • Ingredients
  • 1/3 cup uncooked couscous
  • 1 1/2 cups chopped roasted chicken breast
  • 1 cup chopped English cucumber
  • 1 cup halved grape tomatoes
  • 1 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 4 green onions, chopped
  • 1 garlic clove, minced
  • 1/4 cup fresh lemon juice
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt

Directions

  1. Prepare couscous according to package directions, omitting salt and fat. Fluff couscous with a fork.
  2. Combine couscous, chicken, and next 6 ingredients in a large bowl. Set aside.
  3. Combine lemon juice, olive oil, and salt in a small bowl; stir well with a whisk. Pour dressing over couscous mixture; toss gently.
  4. Serve with: Greek Pita Chips

My new journey starts now, becoming The Sous Chef my journey to greatness. Friday February 9th I accepted a new job, I would go as far as saying a better job. I finally get to cook again and in two weeks I will be the Sous Chef of Silver Garden Event Center come have your wedding here and I will cook for you!! I have been searching for my HAPPY  what I have learned is that you create your own HAPPY and I am definitely creating mine. I give thanks to GOD because I am truly blessed to be doing so well in my field and my forward movement is crazy fast. I am truly HAPPY and now I am going to spread some HAPPY to anyone that wants to be happy. I am going to attempt to post recipes that you want as well as the ones I plan to post. I typically will post healthy recipes and cooking techniques but if you have a question or a recipe you want let me know. I will even help you convert your recipes to make them healthier.
